Cast Away

Ingredients
- 30 ml bacardi
- 30ml malibu
- cap fulll Cherry Vodka
- pineapple juice
- one slice lemon
- half cup sugar
- one slice Pineapple
- strawberry
- small sprig mint
Instructions
First take your slice of lemon and lightly run it around the rim of your cocktail glass
Then ensure the sugar is in a flat-based bowl and dip the rim of the glass into the sugar to create an 'iced' effect
Now place a scoop of ice in the glass and add Bacardi and Malubu. Now pour roughly a cap full of cherry vok in (should settle at the bottom)
Gently tip the cocktail glass on a slight angle and pour the pineapple juice in, taking care not to hit the sugar or stir up the mix too much
Now take the slice of pineapple and the strawberry half and carefully wedge them onto the side of the galss so they are next to each other
Lastly, drop a sprig of mint in the centre of the glass and serve fresh with a straw (customer may mix to combine ingredients)
This is my own invention, and my customers love it! I manage a coctail bar in Australia and I probably sold more of these than any other drink.
*You can substitute the Bacardi for Vodka if need be, but Bacardi is the best. You can really choose your own garnish, but it looks fantastic like this
